AUGUST 8TH – SNEAK A ZUCCHINI ON YOUR NEIGHBOR’S PORCH NIGHT, FROZEN CUSTARD

Zucchini Bake

1 pkg. crescent rolls

3 c. zucchini, peeled and thinly sliced

1 onion, chopped

1 tsp. prepared mustard

1 Tbsp. chopped parsley

¼ tsp. garlic salt

¼ tsp. basil

¼ tsp. oregano

¼ tsp. pepper

½ tsp. salt

2 eggs, beaten

2 c. mozzarella or cheddar cheese, grated

Press rolls into the bottom and 1” up the sides of an 8×8 greased pan.  Make sure the entire surface is covered.  In a frying pan, melt 1 Tbsp. of butter.  Add vegetables and sauté until tender.  Beat eggs with cheese and spices.  Pour over vegetables and mix together well.  Spread evenly over the crust and bake at 350° for 25 minutes.
