AUGUST 5TH – GREEN PEPPERS

Western Omelet with Green Peppers

½ c. smoked ham, diced very fine

½ c. green peppers, diced very fine

1-2 Tbsp. butter

½ c. onion, diced very fine

3 eggs

2 Tbsp. milk

Salt & pepper to taste

Cheddar cheese, grated or sliced thin

Melt butter in medium skillet; sauté ham, pepper and onions until vegetable are tender; set aside. Heat omelet pan or skillet add small amount of butter; coat bottom and side of pan. Beat eggs, milk, salt & pepper until blended. Pour into omelet pan and cook until eggs are set. Spoon ham mixture over center of omelet and fold over, envelope style to hold in filling. Transfer to serving plate. Top with cheese and heat until cheese is melted (can be done in oven or microwave). Serve s breakfast, brunch or light dinner.
