AUGUST 21ST – SPUMONI

Spumoni Chocolate Chip Cookies

2 ¼ c. all-purpose flour

1 tsp. baking soda

1 c. butter, softened

¼ c. white sugar

¾ c. packed brown sugar

2 eggs

1 (3.4 oz.) pkg. instant pistachio pudding mix

1 tsp. vanilla extract

1 (16 oz.) pkg. semi-sweet chocolate chips

½ c. chopped maraschino cherries

¼ c. chopped pistachios

Preheat oven to 350°. Sift together flour & baking soda; set aside. Cream together butter, white sugar, brown sugar in large bowl until smooth. Stir in instant pudding mix until well combined. Beat in eggs one at a time. Stir in vanilla. Blend in flour mixture. Fold in chocolate chips, cherries & nuts. Drop by large spoonfuls onto ungreased baking pans. Bake until light brown, about 10 minutes. Yield: 24.
