APRIL 2ND: SWEET POTATOES and PEANUT BUTTER AND JELLY

Sweet Potato Fries

4 sweet potatoes, cut into large French Fries

1 Tbsp. water

2 tsp. Italian seasoning

1 pinch salt and pepper to taste

½ tsp. lemon pepper

2 Tbsp. olive oil

Preheat oven to 400°. Place sweet potatoes in microwave-safe dish with water. Cook on HIGH for 5 minutes. Drain liquid, toss with remaining ingredients. Arrange fries on baking sheet in single layer. Bake 30 minutes, turning once, or until fries are crispy on outside.
