APRIL 25TH: ZUCCHINI BREAD

Zucchini Bread

Beat: 3 eggs, until frothy

Add: 2 c. sugar,

1 c. oil,

1 Tbsp. vanilla and beat until thick.

Stir in: 2-3 c. grated zucchini (3+ cups, if frozen/thawed)

Sift: 2 c. flour,

1 Tbsp. cinnamon,

2 tsp baking soda,

¼ tsp. baking powder and 1 tsp. salt in separate bowl. Mix to combine and add to zucchini mixture.

Add ¼ c. nuts, if desired. Grease and flour 2 loaf pans. Bake 350 for 50-60 minutes. Makes 2 loaves.
